1. Preheat the oven to 325 degrees F.

2.A medium saute pan with olive oil is preheated. When the onions are transparent but not browned, add them along with the thyme, salt, and pepper and simmer for 8 to 10 minutes, stirring periodically. Add the tomato paste, chicken stock, and Worcestershire sauce after turning off the heat. Allow to gently cool.

3.Incorporate the ground chuck, onion mixture, bread crumbs, and eggs in a large bowl and stir with a fork to combine. Avoid mashing to avoid dense beef loaf. On a sheet pan lined with parchment paper, form the mixture into a rectangle loaf. On top, apply the ketchup evenly. Bake the meat loaf for 1 to 1 1/4 hours, or until the internal temperature reaches 160°F. (A hot water pan placed underneath the meat loaf in the oven will prevent the top from breaking.) Serve warm.
